Singapore’s Spanish-Inspired Showstopping Cocktails
Amor’s Cocktails Know How to Make an Entrance
The first sip has a job to do.
It must wake the conversation up and make the light look warmer. It must tell the table that dinner is not finished simply because the plates are clearing.
At Amor, the new signature cocktails do not arrive like background music. They enter with colour, scent and the confidence of a person who knows the room has been waiting for them.
There is a bright yellow sour with habanero heat, a pomegranate-red drink with the name of an ancient Spanish city. There is something pickled, something velvety, something botanical.
This is not a list of drinks. It is a small cast of characters. And every good night needs characters.

The Bar Wakes Up
Dinner Has Another Act
As the evening moves on, Amor changes its pace. The terracotta walls catch a different light. The trencadís mosaic bar begins to shimmer. The kitchen is still sending out plates, but the room starts to lean toward laughter, music and the useful question: what should we drink now?
A cocktail is a moment edited down to its best details: a scent, a colour, a little tension between sweet and sharp. It should make the next line of conversation arrive more easily.
At Amor, that is when the bar takes its turn. Read Amor’s dining experience to see how the room shifts after dark.

Pick a Feeling, Not a Formula
Bright. Dark. Bold. Quiet.
La Dama Amarilla comes bright, sour and touched with habanero. Seda Líquida leans velvety, while Noche Terciopelo brings coffee and cream into the evening’s darker half.
Then there is Esencia de Pepinillo, savoury and unexpected; Güisqui Sour, where old-cellar confidence meets a clean herbal finish and Sangre De Solis, a dramatic name that references the historical importance of corn in the Spanish speaking Americas and the rich, dark colour of the broth.
You do not need to remember all of that. You only need to notice which sentence made you thirsty.

Let the Food Join In
A Good Cocktail Has Friends at the Table
Cocktails do not have to wait until dessert. A bright drink can sharpen the first tapas. Something bitter and botanical can sit comfortably beside Jamón Ibérico, smoky prawns or a hot croquette.
For a classic Spanish ritual in a glass, discover why the Gintonic is more than a drink.

The Night Is Still Writing Itself
At Amor, dinner becomes dessert, dessert becomes another round, and the room grows more electric without losing its warmth. For an independent introduction to the evening, read The Straits Times’ review.
The right cocktail does not interrupt the evening. It teaches the evening how to continue.
